I was hungering for sweets the other day and decided that I should share the love and bring in some cookies for my boyfriend's co-workers as well. I wanted something simple, but delicious so I decided to make this scrumptious twist on an old favorite. In case you didn't know, the old favorite was Chocolate Chip Cookies. Just so Y'know.

Fat Elvis Cookies
yields about 24-30

2 cups Flour
3/4 Brown Sugar
3/4 Granulated Sugar
1 Teaspoon Salt
1 Teaspoon Baking Soda
1 Teaspoon Vanilla
1 Large Egg
1/2 Ripe Banana (not ripe bananas still work)
1 bag Mini Peanut Butter Cups

1. Preheat oven to 350

2. Mix Flour, Baking Soda, and Salt in a bowl and set aside.

3. Smoosh that banana!

It doesn't have to be completely smooshed, just so it's a goo-like consistency.

4. Cream the Butter, Granulated Sugar, Brown Sugar. Add the Banana and then the Egg, beating after each addition.

5. Gradually add the Flour mixture

6. Unwrap the Peanut Butter Cups

7. Cut the Peanut Butter Cups into fourths (or just chop 'em up, doesn't really matter).

8. Place dough on an ungreased baking sheet, don't make 'em too big or they won't cook in the middle.

9. Place in the oven for appx. 8-11 minutes, until golden brown

Enjoy!
